The Culinary Tour's wine and food pairing setting
Gardens, Horses and Wines
Chalk Hill Estate Vineyards and Winery
February 11, 2009
Atop rolling hills in Sonoma County lie the 1,477 acres of Fred and Peggy Furth's Chalk Hill Estate Vineyards and Winery.
The 2 ½ hour Culinary Tour stops at the Furth family's culinary garden complete with organic produce, green house, chicken coop, bat box and owl roost. Visitors then move by van past the family chapel to a viewing point where far away Mount Saint Helena in Napa County can be seen on a clear day. A drive by the family's high-tech equestrian center leads to the grand finale, a sublime 3-course wine and food pairing inside the Estate Pavilion overlooking an Olympic-sized dressage riding area.
Executive Chef Didier Ageorges brings to life the flavors of three Chalk Hill wines served with small plates featuring seasonal produce straight from the garden. An unfiltered 2006 Estate Bottled Chardonnay paired with a lobster and sole purse swimming in vanilla-parsnip puree was the perfect example of how good wine with fresh food in an elegant setting begets magic. While not inexpensive, at $75 per person the experience is a top value.
