Leave it to a couple of creative viticulture and enology students from Cal Poly to dream up the notion of a liquid cracker. SanTásti (pronounced san tas tea) classic is a tasteless, carbonated beverage designed to enhance the enjoyment of wine tasting. A swig of it eliminates lingering flavors from the mouth, making room for a fuller appreciation of what comes next.
We've got nothing against crackers, but applaud innovation. So we took home a couple of four-packs from a recent tasting in Paso Robles to try out on skeptical editors. In one tough test, we cleansed the residue of our favorite pepper jelly from our palates to better appreciate the extra virgin olive oils we were sampling. SanTásti is good for more than wine tastings.
Next time you're hosting a dinner or party, enlighten and intrigue your guests by serving this excelsior in shot-glass sized portions between courses or when you switch from white to red wine. Who knows? a lively discussion could break out about mouthfeel (wine snob term for the texture of wine) and how we humans taste wine (hint: about 90% through smell).
