A dense shroud of fog surrounds giant oaks and conceals secretive trifolaos. Prized pigs, snouts caked thick with mud, root for gastronomical jewels, dubbed white diamonds. When October comes, let the hunt for Alba's white truffles begin! There's good reason for a truffle hunter's stealth; a pound of this buried treasure can fetch $2,000 at the International White Truffle Fair of Alba, in the Piemonte wine region.

Traditionally female pigs search out truffles hidden underground among the roots of oak trees, mistaking the scent for male Casanovas. Sows aside, to a truffle devotee scent is everything, and epicureans are enamored with the garlicky, musty, earthy aroma of white truffles.

Thanks to the likes of Jack Czarnecki, author and owner/chef of Joel Palmer House in Dayton, Oregon, a nascent truffle love affair has blossomed in the foothills of the Willamette Valley in Oregon's wine country. He handcrafts small batches of Oregon White Truffle Oil from wild truffles foraged by Jack, personally. Truffle oil is a finishing oil not a cooking oil. Drizzle over hot foods to release the aromatic aroma and use within four months.
