This is the second of our Secret Agent series.
When the Romans conquered Gaul, it's likely that natives were already growing wine along the long thin escarpment of Jurassic limestone that today supports some of the most expensive vineyards in the world. After decades of inheritance under the Napoleonic Code, a vineyard, or climat, may be as tiny as one or two rows. This can make selecting wines from the revered Burgundy a real challenge.
A Minute 00:60 subscriber introduced us to native Burgundian, Philippe Sauriat. He and his colleagues at Burgundy Wine Company help clients unlock Burgundy's mysteries. We got a first hand look at his skills while sampling earthy pinots at Adour, the sleek Alain Ducasse restaurant in midtown Manhattan where Philippe is, by night, Sommelier.
When Burgundy Wine Company opened in Manhattan's West Village in 1988 as a self-described "shoe box sized store," it mainly served Burgundy collectors nationwide. Today, a 2,500 square foot location in Chelsea gives owner Geraldine Tashjian space for free nightly tastings and occasional live jazz events. Visiting winemakers lead fruitful discussions covering six to eight different wines.
The company limits inventory to producers they have visited at least once each year and primarily from wines they've tasted in barrel and in bottle. All are cellared under the store at 52 degrees and ones you order won't be shipped until outside temperatures are suitable.
